This healthy, paleo and protein-packed dinner is the full package! The turkey breast, apple bacon sauté, and sweet potatoes are all easy to prepare ahead of time for a quick, easy, and delicious next-day lunch or dinner. It’s perfect for a cold winter night. This meal is whole 30 diet compliant—no sugar, alcohol, grains, legumes, or dairy, but is still hearty and totally delicious.
Pro-tip: Cook the sweet potatoes in the oven while cooking the apple bacon sauté and turkey breasts on separate burners. Keep a lid on the sauté when the heat is off. Place the cooked turkey breasts on a plate and cover with foil until the rest of the food is ready to be served.
Pan-Seared Turkey Breast
Ingredients
4 turkey breasts
2 tablespoons coconut oil
1/4 teaspoon dried rosemary
1/4 teaspoon smoked paprika
1/4 teaspoon dried sage
1/4 teaspoon dried thyme
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1/4 teaspoon salt
Directions
1. Lay the down the turkey breasts on a clean surface. Season both sides of the meat with salt, pepper, garlic powder, smoked paprika, sage, and thyme.
2. Heat a cast iron skillet on medium-high heat. Add 1/4 teaspoon rosemary and wait about 45 seconds to 1 minute for it to begin bubbling.
3. Add two of the turkey breasts and cook for 4 minutes per side. Remove the breasts and add the other two— repeating the same process.
Apple Bacon Sauté
Ingredients
6 apples (sliced)
5 strips of bacon (crushed)
1 large yellow onion (sliced)
1 clove garlic (minced)
1 tablespoon grass-fed butter
1/8 teaspoon black pepper
1/8 teaspoon salt
1/4 teaspoon dried thyme
Directions
1. Add your bacon to a frying pan on medium-high heat.
2. Cook for about 4-5 minutes while flipping occasionally until the bacon turns crispy. Remove it from the pan and onto a plate.
2. On a medium heat add the butter, apples and onions to the left over bacon fat.
3. Season with salt, pepper, and dried thyme.
4. Cook for 15-20 minutes stirring frequently until everything has almost cooked through.
5. Add the minced garlic and cook for 2-3 more minutes then off the heat.
Sweet Potatoes
Ingredients
2 sweet potatoes (cubed)
2 tablespoons coconut oil
1/8 teaspoon black pepper
1/4 teaspoon salt
1/8 teaspoon smoked paprika
1/4 teaspoon dried sage
Directions
1. Preheat the oven to 400°.
2. Cut the sweet potatoes into cubes and place them in a mixing bowl. Season with black pepper, salt, smoked paprika, and dried sage. Drizzle with 2 tablespoons coconut oil and stir everything together to combine.
3. Pour the sweet potato mixture out of the bowl and onto a baking tray and place into the oven once it has pre-heated.
4. Cook for about 35 minutes until soft and crispy.
