I make this granola recipe every Sunday to eat throughout the busy week. It’s pretty healthy and easy to throw into a container to take with you to the office. I like using the Stonyfield® Organic Probiotic Yogurt (½ cup whole milk vanilla + ½ cup plain whole milk) and fresh blackberries as my fruit of choice. I love the Stonyfield® Greek yogurt as well but it’s twice as expensive so I’ll only buy it on sale! Stonyfield® Greek yogurt is a wonderful option for those of you who are looking to add more protein to your diet. 😉
Ingredients:
2 cups rolled old-fashioned oats
1 ½ cups Omega 3 Deluxe trail mix
½ teaspoon cinnamon
¼ teaspoon pumpkin pie spice
3 tablespoons raw local honey or elderberry syrup
¼ cup melted coconut oil
1 teaspoon pure vanilla extract
Pinch of salt
Directions:
- Preheat the oven to 350° and line your baking sheet with parchment paper (optional).
- In a mixing bowl, add all of your ingredients and stir thoroughly to combine.
- Once the oven is preheated, pour the mixture onto the baking sheet, and put it in the oven.
- Bake for 12 minutes and then remove it from the oven.
- Let the granola cool for about 5 minutes and then spoon it into a large mason jar.
