Savor the perfect blend of soothing and delicious with my current go-to dinner – a stomach-settling soup that’s been my culinary love for the past two months. Tailored for those battling acid reflux, this recipe yields around 10 servings, making it a convenient and flavorful choice for weekly meal prep!
Please note that this recipe is best made in a Dutch oven or a large pot. It’s also important to get high-quality bone broth. I buy Trader’s Joe chicken bone broth found in the refridgerated section of the store–not the carton!
Ingredients
1 pound chicken breast (finely chopped)
3 cups carrots (cut in rounds)
1 bulb fennel (finely chopped)
2 red bell peppers (chopped)
3 stalks celery (minced)
1 tablespoon fresh ginger (grated)
8 cups spinach
4-6 sprigs of fresh Thyme
20 oz. pouch of Trader Joe’s chicken bone broth
2 tablespoons apple cider vinegar
7 cups of water
4 tablespoons avocado oil
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
Salt & pepper (to taste)
Directions
- Heat a Dutch oven on medium-high heat & add the carrots.
- Season with a sprinkle of salt, pepper, 1/2 tsp. onion powder, & 1/2 tsp. garlic powder.
- Cook for 10 minutes.
- Add the fennel, red bell peppers, & celery. Cook for 8 more minutes.
- Remove vegetables from the Dutch oven & place them in a separate bowl.
- Add two more tablespoons of avocado oil to the Dutch oven on medium-high heat.
- Add the chicken.
- Season with a sprinkle of salt, pepper, 1/2 tsp. garlic powder, & 1/2 tsp. onion powder.
- Cook for 12 to 13 minutes.
- Add the cooked vegetables back into the Dutch oven.
- Add ACV, ginger, bone broth, water, spinach, dried basil, dried oregano, & smoked paprika.
- Bring the mixture to a boil and then turn down to medium.
- Add the thyme to the top and cover the Dutch oven.
- Simmer for 15 to 20 minutes.
- Remove thyme from the Dutch oven and serve on top of your pasta of choice!
I find that this soup is best served on a bit of pasta which I cook on the side and spoon into a separate bowl. I then pour the soup over the noodles and top it with nutritional yeast!
