You’re going to love this meal during the coldest weeks of the winter. It’s affordable to make, easy to assemble, and perfect for meal prepping for either lunch or dinner. This recipe will make enough for 5 days’ worth of meal prep.
INGREDIENTS
1 lb. ground turkey
2 tablespoons avocado oil
1 large red onion (diced)
1 seeded jalapeno (minced)
3 cloves garlic (minced)
15.5-ounce can of dark red kidney beans
1/2 cup white wine (Chardonnay)
8-ounce can of plain tomato sauce
10-ounce can of Tomato & Chile Rotel
1 small container of spinach
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. smoked paprika
1 tsp. dried basil
1 tsp. chili powder
1/4 tsp. cinnamon
A few drops of liquid smoke
DIRECTIONS
- Heat a Dutch oven on medium-high heat with 2 tablespoons of avocado oil.
- Saute onions and jalapenos for about 10 minutes.
- Add garlic and cook for 2 to 3 more minutes until fragrant.
- Turn the heat up to high and add the white wine and spinach.
- Cook for 2 to 3 more minutes.
- Turn the heat back to medium-high and add the ground turkey.
- Season the meat with salt, pepper, onion powder, and garlic powder.
- Cook the meat for about 10 minutes until it has cooked through.
- Add the Rotel, kidney beans, and tomato sauce & stir together.
- Add the cinnamon, chili powder, dried basil, smoked paprika, and liquid smoke.
- Simmer on medium heat for 10 minutes.
- Serve on rice or pasta and top with scallions and sharp cheddar cheese!
