I don’t know about you but I love eating the rainbow! 🌈 The vibrant colors and refreshing flavors within this dish provide a welcome break from the heartier and richer comfort foods of winter. As we begin looking towards the first warm days of Spring when we clean out our homes–let’s not forget to “clean out” and detoxify our bodies too. I love having this dish for dinner right after the gym! I prep all of the ingredients on Sunday and they last the whole week. Pro-tip: Keep your chopped cilantro fresh by wrapping it in paper towels. Just place one at the bottom and one at the top of the container before sealing it. Your cilantro will stay crisp and ready to use for longer!
Ingredients
1 bundle of Kimbo noodles or vermicelli rice noodles
Ground Beef Mixture:
1 lb. ground beef
1 teaspoon fresh ginger (grated)
2 large cloves of garlic (minced)
8 scallions (thinly sliced)
½ teaspoon Chinese Five-Spice Seasoning
Salt & pepper
Vegetable Sauté:
2 tablespoons avocado oil
3 red bell peppers (chopped)
12 mushrooms (chopped)
1 clove garlic (minced)
Salt & pepper
Bowl Toppings:
1 bunch of cilantro (chopped)
4 carrots (shredded)
1 English cucumber (chopped)
1 can water chestnuts (chopped)
3 tablespoons Melinda’s Sweet Thai Chili Sauce
Directions
Vegetable Sauté
1. In a Dutch oven or large skillet, heat 2 tablespoons of avocado oil on medium-high heat.
2. Add the red bell peppers and season generously with salt and pepper. Cook for 5 to 6 minutes.
3. Add the mushrooms and garlic. Cook for about 7 more minutes.
4. Remove the veggie sauté from the pan and place them into a separate bowl.
Ground Beef Mixture
5. In a Dutch oven or large skillet on medium-high heat (the same one you used for the step above) add the ground beef. Season with salt and pepper. Cook for 5 to 6 minutes crumbling periodically with a spatula.
6. Add the Chinese five-spice seasoning, garlic, scallions, and ginger.
7. Cook for 6 to 7 more minutes until the ground beef is completely cooked through.
Noodles
8. Bring water to a boil and add the noodles. Cook for only 2 minutes.
Bowl Assembly
9. Place the noodles on the bottom of a bowl. Top with ground beef mixture, vegetable sauté, cucumbers, water chestnuts, carrots, cilantro, and a big swirl of the sweet Thai chili sauce.
